Recipe for Napolitan Pizza with Home-made Dough

A delicious recipe for home made pizza dough which you can top with different ingredients

Ingredients For 4 people

  • 2 Cups of Flour without Yeast
  • 1 Pack of Baker's Yeast
  • 1 Cup of Water
  • 2 Tomatoes
  • 2 Cubes of Tomato Pulp
  • 2 Onions
  • 1 Green Bell Pepper
  • 2 Slices of Pineapple
  • 2 Sausages
  • Grated cheese
  • Oregano

Preparation

The secret to any home-made pizza is its dough and this one is no exception. To make it mix 250 grams of plain flour with a package of baker’s yeast (these are small packages sold in boxes containing several units). Gradually add 1 cup of water and knead the dough with your hands until it’s elastic and uniform.

 

Shape the dough into a ball and place it in a bowl to rest for about 30 minutes. While the dough rests add a drizzle of olive oil to a saucepan and cook the onion (we prefer to add the onion chopped directly on the tomato sauce instead of distributing it in pieces over the pizza with the rest of the ingredients), when it becomes transparent add 2 chopped peeled tomatoes and 2 cubes of tomato paste, let it cook in a low fire.

 

Returning to the dough, sprinkle flour on your kitchen balcony and place it there kneading it using a rolling pin until it is about  half a centimetre thick. Do not worry about the form it acquires, we’re not making an industrial pizza so the fact that it’s shape is somewhat rough actually contributes to give it a deliciously rustic feel.

 

When the dough reaches the desired thickness sprinkle your oven tray with flour, roll the dough around the rolling pin and unroll it gently onto the tray.

 

Remove the tomato sauce from the stove and spread it evenly throughout the dough. Distribute the remaining ingredients equally on top of the pizza chopped into small pieces of roughly the same size. You can use any set of ingredients, we chose to use pineapple, green peppers, pieces of sausage and delicious traditional Portuguese chorizo. Afterwards cover the pizza with grated cheese and sprinkle it with oregano.

 

Bake it in an oven pre heated at 400ºF. About 20 minutes should be enough to bake your pizza, check it periodically after 15 minutes of cooking and be sure to remove it while the dough is still a bit soft.
