A very tasty recipe for quiche which is extremely easy to prepare

This quiche is a quick extremely easy to prepare recipe for a lunch at home with ingredients that you’re easily bound to find on your pantry and fridge. It’s also a great solution to take with you and eat at work during lunch break which you can prepare during the night before, while you’re cooking dinner, slice it up and store in individual portions. You can eat it with a side salad of lettuce, onion and green olives with a vinaigrette sauce which freshness complements beautifully oven baked dishes.

Ingredients For 2 People

  • Shortcrust Pastry
  • 1 Zucchini
  • 1 Red Bell Pepper
  • 2 Cans of Tuna
  • Ketchup
  • Slices of Cheese
  • Breadcrumbs
  • Olive Oil
  • Salt


Cut the zucchini into thin sticks and the bellpeppers into small pieces. In a frying pan add a drizzle of olive oil and cook the vegetables with a pinch of salt.


In a round tin (you can use a small cake mold), place the pastry. Add the pieces of canned tuna and a little ketchup over it. On top of this mixture  add the zucchini and the bell pepper which you previously cooked.


Afterwards place the slices of cheese over these ingredients, cover with a generous amount of breadcrumbs and, to top it off, a drizzle of olive oil. Fold the excess pastry over the quiche to give it a rustic countryside feel.


Bake the quiche in the oven for 25 minutes at 200 degrees.
