Ingredients For 2 people

  • 2 Turkey Steaks
  • 2 Eggs
  • 1 Tomato
  • 1 Onion
  • Tomato Pulp
  • White Wine
  • Olive Oil
  • Salt and Pepper
  • Bay Leaves

Preparation

Place the turkey steaks (ask the butcher to cut them very thinly and make sure they are large enough to wrap around the eggs) in a bowl to marinate in white wine, salt and pepper. As these gain flavour, place two eggs in a pot with boiling water.

Meanwhile chop the onion and place it in a pot with a drizzle of olive oil to brown, when it gets a nice colour add the  tomato cut into small pieces without skin, a cube of tomato paste and 2 bay leaves.

When the eggs are cooked, remove the shell carefully and place them in the center of the turkey steaks. Carefully roll the steak around the egg and use multiple toothpicks to secure the ends of the steak in place so that it will not come apart when cooking.

Place the steaks in the pot with the tomato sauce add some white wine and let it cook for a few minutes until the steaks are nicely cooked, add salt if necessary.

When the meat is well cooked remove it from pan and gently slide out the toothpicks. Cut the steaks in half in order to make the egg visible and serve with white rice and the tomato sauce.
